Why is it that foods and drinks that I previously enjoyed suddenly
(post-op) taste HORRIBLE and is this permanant?

This is because you are now in Ketosis. This is the stage where you
are actually burning fat and it tends to cause some chemical changes
in both taste and smell. Mostly it is not permanent, but a few
people sometimes have lasting effects.
